Indian Food Recipes are easy to follow and the result would be food if followed with care. Paratha is a basic North Indian bread which is sometimes stuffed to add taste. Stuffed parathas are very tasty and a full meal in itself. They are dry and easy to carry on a picnic or to office or school. They are also easy to store in the fridge and can be reheated and used in a jiffy when unexpected guests arrive.
Potato Paratha are Parathas stuffed with potatoes, shredded cauliflower, peas or any other vegetable easily available which is cooked . They are also good short eats when cut into pieces. Served usually with a salad, curds and pickles.
Ingredients :
Boiled Potatoes 2
Onion 1
Coriander powder 1 tsp
Cumin powder 1 tsp
Green chilly 1 slit
Lime juice 1 tsp
Salt to taste
Wheat flour 2 cups
Water 1 cup
Method:
Peel and mash potatoes. Cool. Heat a little oil and sauté some finely chopped onions, green chilly, coriander powder and cumin powder. Mix well with the potato mash after both reach room temperature. Make small balls of the mixture. Make a dough of the wheat flour and water. Add water in small quantities and knead such that the dough is soft and not sticky. The amount of water to be used is approximate. As you knead you will know how much water has to be added. Now take a ball of dough slightly bigger than a lime and roll it to a circle 4-5 inches in diameter. Place the potato mixture into it and again make a ball covering the potato mixture completely sealing the stuffing. Flatten these balls and roll into 6 inch circles. Heat a girdle or any thick bottomed pan. Oil it slightly and cook on low flame. Cook on both sides. Serve hot with pickles, salad and curds.
